After switching to a real food diet to mediate autoimmune disorders, Rebecca began cooking everything from scratch at home - yuca waffles included. At 23, she quit her desk job as a Business Intelligence Associate for a restaurant group to set out on a mission to share her waffles, dubbed 'Swapples', with as many people as possible. As founder and CEO, she continues to grow her company with the hopes of disrupting the breakfast table and inspiring the entire nation to eat more fruits and vegetables, one waffle at a time.
