Bridget Amor (with business partner Mark Dundon) is behind the coffee operation that takes in the Seven Seeds roastery and cafe as well as the smaller inner city outlets Brother Baba Budan, Traveller and most recently, Hortus.
Seven Seeds sources green coffee direct from origin to roast here in Melbourne. There’s a strong emphasis on building long lasting relationships with producers and cooperatives at origin, with our wholesale customers here in Australia, and with the general consumer who frequents our cafes on a daily basis. We want to keep it transparent at every step but also let the coffee speak for itself.
Opening it’s doors in 2008, Seven Seeds was designed to show the process behind the way coffee is made - the building allows the viewer to see the roasting, tasting and production process. The transparency of the space allows people to understand what we do and shows the effort and work that happens behind the scenes. The aim is to invite the viewer into the conversation about coffee, see a little more of what goes on behind doors and of course tell more of what we know.
