About the Speakers

Eric Silverstein

Eric is a modern day entrepreneur. He started The Peached Tortilla from a single food truck he rented from a lonchera commissary in 2010. From that single truck he expanded, eventually custom building two food trucks and launching a full service catering business. In 2014, Silverstein opened his first brick and mortar location on Burnet Rd., a full service neighborhood restaurant focused on family style dining and craft cocktails. To accommodate Peached's growing catering business, he launched Peached Social House in 2016, a 7,500 square foot event space that also houses The Peached Tortilla's catering business. From 2018-2020, The Peached Tortilla grew further, launching (1) a quick service kiosk inside Austin Bergstrom International Airport; (2) Bar Peached, a bar focused restaurant located in Clarksville; and (3). a ghost kitchen within a virtual food hall in Boise, Idaho.

Eric has been featured in a variety of publications and television shows including Kiplinger's Finance, People Magazine, Live! With Kelly and Michael, Taco Trip with Aaron Sanchez, and The Grill Dads. Restaurant Hospitality has named him one of the "Stars of Street Food" and in 2014, Plate Magazine named him one of the 30 Up and Coming Chefs in America. In 2016, FSR named Eric one of the 40 under 40 Rising Stars in Hospitality.

Eric recently wrote The Peached Tortilla Cookbook, a cookbook memoir that is set to hit shelves in May 2019.

Jenna Benn Shersher

Jenna is a 38-year-old cancer survivor, civil rights advocate, world traveler, and tiny twister who dreams big. In December 2010, Jenna was diagnosed with a rare blood disorder called Grey Zone Lymphoma, which at the time, affected fewer than 200 people.

Instead of surrendering to cancer, she was determined to find meaning in her suffering. In the course of her fight, Jenna figured out creative ways to leverage social media to process her experience, and in turn, create a community that became invested in her fight. In the course of a year, Jenna battled cancer and founded the nonprofit organization, Twist Out Cancer.

Today, Jenna is the CEO of Twist Out Cancer, which is an international non-profit charitable organization that provides psychosocial support to individuals touched by cancer through creative arts programming. The organization was founded on the principle that when you share, the world opens up. What started in 2012 as a small art exhibition in Chicago for 20 Inspirations and Artists has now become an international program that has touched over 30,000 people around the world.
More information on Twist Out Cancer is available at www.twistoutcancer.org.
