Paul along with his wife Jamie, own and operate Schnibs Pretzels. After starting the company out of their apartment in 2014, Schnibs has grown from a few area farmers markets to supplying pretzels to retailers like Whole Foods and HomeGoods. Schnibs sells both soft and crunchy pretzels through retail and wholesale, and in the summer operates a pretzel cart at local events and festivals.
Paul got his start in the food business waiting tables while attending college. He and Jamie have about 25 years of food industry experience between them. Prior to starting Schnibs, Paul helped open Ithaca Beer Company's new taproom and restaurant in Ithaca, NY. Upon moving to Colorado he worked for Jim Cohen of Empire Lounge, at Pizzeria de Lupo in Boulder.
