Josh Henderson is the award winning Executive Chef and founder of the highly-acclaimed Huxley Wallace Collective. He is known for caring deeply about the ingredients he uses, the colleagues he works with, and the guests that choose to visit his restaurants.

In 2007 Josh started Skillet Street Food out of a dilapidated airstream trailer embarking on a defining moment in his career and leading a movement in the Seattle food scene.. Over five years he grew the company to include three brick and mortar restaurants, , two food trucks, and an international food product line. He left the company in 2012 to launch the Huxley Wallace Collective.

Huxley Wallace Collective boasts a number of successful Seattle based spaces including Westward, a contemporary "water inspired" restaurant and bar located on the shores of Lake Union; fan favorite Quality Athletics, a full service sports bar and restaurant located in Seattle’s Pioneer Square; Great State Burger, a take on the classic burger joint serving grass-fed organic burgers, organic milk shakes and Yukon Gold crinkle cut fries; Vestal, a warm mid-century modern space centered around a wood fired hearth serving his take on modern American food inspired by the hearth; Saint Helens, a neighborhood café and brasserie, and Thompson Seattle’s signature restaurant, Scout, and expansive rooftop lounge, The Nest.

Josh received the Star Chefs Rising Star Award in 2009, was named the most influential person of 2010 by Seattle Magazine, and was recognized in Puget Sound Business Journal’s 2012 top 40 under 40. In 2014 he was nominated for a James Beard Award (Restaurant Design: Westward).. Josh is actively involved in the food world, leading discussions locally and across the country, and participating in events as highlighted chef and food expert. He supports a number of local and national nonprofit organizations, including the No Kid Hungry campaign based out of Washington, DC. To date his company has donated more than $150,000 and countless volunteer hours.
