Balthazar discovered his passion for hospitality from an early age. The ringing of the dinner bell, along with the rapidly-approaching footsteps of his six siblings to share a family meal together introduced him to the connection between food and people. It was a bond that continued to be reinforced throughout Balthazar’s childhood and adolescence, with food greatly influencing his way of life.

After graduating from École Hôtelière de Lausanne in 2001, Balthazar worked abroad and eventually opened his own restaurants in Bordeaux six years later. However, the pursuit for new challenges ultimately led him to the other side of the pond in Canada. Having worked with Restaurant Daniel’s former Executive Pastry Chef Francois Payard, Balthazar had the opportunity to meet the famed Daniel Boulud and his team. After a brief stint at Le Newtown in Montreal, he joined the Dinex Group as General Manager of Café Boulud & d|bar in the Four Seasons flagship in Toronto in May 2014. Balthazar oversaw the pre-opening, launch and day-to-day operations of the French Brasserie and Daniel’s Bar, known as d|bar. Three years later, he joined Freed F+B and Trademark Hospitality as Director of Operations, eventually going on to open his own hospitality group and work for Orchestra Restaurant Group as Managing Director. However, it wasn’t long before the call of the unknown beckoned him once again and he set his sights on Asia.

Currently General Manager of db Bistro & Oyster Bar since 2018, Balthazar, along with his wife and sons happily call Singapore their home. A global hub for innovation, the city’s bustling multi-cultural scene allows Balthazar to stay connected to what he likes best: food and people.
